Engraved on the blades is the brand name “Sakai ichiji,” which came from the nickname of the founder Baba Kuniharu, as the kanji for Kuniharu can be read alternatively as Ichiji. This series includes Japanese and Western knives made from standard materials using traditional hand-craft method. Professional or not, any cooking lover would want to have one of these on hand.
Sakai-forged knife and scissors are made by hand using traditional techniques and materials, and they have been designated by the national government as “Traditional Craft Product” since 1982. The certification label is attached to those products.
